    You bid on a PLUG and PLAY thermostat, simply plug it into a 120V outlet, connect your freezer or fridge to the thermostat and place probe inside.

    Temperature Control:
    The most critical part of curing/fermenting is the control of the correct temperature and humidity in the chamber. This let us produce the finest and highest quality food at any time of the year regardless of the environment we live in. Our ancestors could process their food during just a few weeks a year when the climate was acceptable.
    Be aware of...
    Digital thermostats would be a good solution, but they often stop working on a power failure or power-surge,
    this can happen at any time - every day and not only in bad weather (like all electronics at your home...)!
    If a thermostat fails, the problems could be enormous.
    There is one more problem with a digital temperature controller; you need to fabricate a box with a square hole to install the thermostat and you need to hook up the various wires...
    Just to mention:
    you don't need a thermostat with a wide range (like -30ºF to 120ºF), if you just touch the dial - you're 10 degrees OFF...
    A regular mechanical thermostat is the best solution, but most of them have a wrong range, like 0ºF to +47ºF.
    You don't need to go into freezing temperatures, your new thermostat should operate from
    0ºC to 40ºC (32ºF to 100ºF).
    Keep in mind that fermenting and curing temperatures require temperatures up to about 85ºF depending the starter culture (Bactoferm) and possible a mold starter for curing!

    I finally came across the perfect thermostat: Very precisely, adjustable between 32ºF to 100ºF (0ºC to 40ºC).
    Easy to Install
    :    If you're using a freezer or cooler, simply bypass the existing thermostat or set it at the lowest range.
    Just plug the new thermostat in your power outlet and attach your freezer or fridge to the controller and place the probe into the cooler. The sensor capillary tube is very small and fits easily trough the door seal of your freezer/fridge. Or you may drill a 1/4" hole in the top for the sensor. Complete and easy to understand instructions are included with your purchase.
    TIP:
    I drilled a 1 1/2" hole on top of my box to accommodate the temperature/humidity sensor, power supply for the humidifier and a ceramic heater (in the cold weather). I closed it with a piece of rubber foam but I can use it anytime for whatever else I need to install later on.
